Fajita Sandwich

Fajita Sandwich

Ingredients



Bread (of your choice): 8 Slices
Finely Chopped Tomatoes: 2 No
Finely Chopped Onion: 2 no
Boiled Corn:1 Cup
Finely Chopped Bell Peppers (Red, Yellow,Green): 1 Cup
Mayonnaise: 4 Tbspn
Olive Oil: 1 Tbspn
Butter: 4 Tbspn
salt to taste
Freshly Crushed Black Pepper: 2 tspn
Mustered Sauce: 1 Tbspn
Spread Cheese:  1 to 2 Tbspn
Red Chilly Flakes: 2 tspn
Oregano: 2 tspn
Mixed Herbs: 1 tspn
Catch up for garnishing


Method



In a mixing bowl, take finely chopped onion, tomatoes, bell peppers and corns and prepare salad.

for preparing the dressing, mix mayonnaise, olive oil, spread cheese first and then season it with all the herbs and spices. Mix it well.

Add the previously prepared salad into this dressing and mix it properly. Fajita is ready.

Take a bread slice and spread butter on it. put fajita on it and spread on the slice. Put another buttered bread slice onto it and cut the sandwich diagonally.

Serve it with catch up accompanied by an iced tea (or any other drink).

Generally this sandwich goes very good when served with chilled fajita in it.

Pitta Pockets

Pitta Pockets



Preparation Time: 2.5 -3 Hours
Cooking Time: 15 Minutes.
Servings: 2


Ingredients


Warm Milk: 1 ½  Cup
Dry yeast: 2 ¼  tspn.
All purpose flour: 3 ½  Cup
Olive oil: 2 Tbspn.
Salt: 2 tspn.
Baking powder: 1 ½ TbSpn.
Sugar: 1 tspn.
Oregano: 1 tspn.
Red Chilly flakes: 1 tspn.

Ingredients for Filling


Chopped Capsicum: 4 Tbspn.
Chopped Onion: 4 Tbspn.
Blanched Corn: 4 Tbspn.
Cottage Cheese Cubes: 4 Tbspn.
Chopped Olives: 2 Tbspn.
Mayonnaise: 2 Tbspn.
Olive oil: 1 Tbspn.
Tabosco Sauce: 3-4 drops.
Chilly Flakes: 2 tspn.
Oregano: 2 tspn.
Red Chilly Garlic paste: 1 tspn.
Mixed herbs: 2 tspn.
Dry Thyme: 1 tspn.
Salt to taste
Crushed black pepper: pinch
Processed Cheese: 4 Tbspn.


Method


In a small bowl, take Luke-warm milk and add dry yeast and sugar to it. Leave that for 10 minutes to activate the dry yeast.

In another mixing bowl, take all purpose flour and add olive oil, salt, baking powder to it.

Mix it well. 

Add activated yeast milk to that and knead the smooth dough. Grease a bowl with oil and put that kneaded dough into it and cover the bowl with a clean film or a tight lid. Let it rest for 2 hours.

After 2 hours, dough must be risen almost in double in the volume.

Again apply some oil onto your fingertips and knead the dough lightly again.

Divide this dough into two equal proportion.

Keep it in a warm place for another 30 minutes.

Roll them into 1/2 inch thickness.

Greece the baking tray with a drop of oil(or butter). 


Put rolled pittas into the tray.


Put the tray into the preheated oven (Preheat oven 200 degree for 10 - 12 minutes). 

Bake it for 15 minutes on 180 degrees.

Take the baked Pitta breads out of the oven and let them come to the room temperature. 

Cut them into two parts from the middle.

Take one portion of it and make pocket from it by cutting it from the edge. Do it with all four portions.

Prepare the filling by mixing capsicum, onion, olives, corns, cottage cheese cubes and all the spices and sauces and mayonnaise into another bowl.

Fill each pocket with this filling and garnish them with grated processed cheese.

Put them all into the microwave on Convection mode for 2-3 minutes at 180 degree. Let the cheese melt.

Take all these pitta pockets into a serving plate and serve them HOT... !!!

Ingredients


All purpose flour(Maida)/ Whole wheat flour: 3/4 Cup
Unflavored Oil: 1/4 Cup
Curd: 1/4 Cup
Pizza gravy: 1/2 Cup
Baking Powder: 1/2 tspn
Baking Soda: 1/4 tspn
Salt to taste
Chopped capsicum: 1 Tbspn
Small Cheese cubes(processed): 2 Tbspn
Corn: 1 tbspn
Pizza Seasonings: 1/2 Tbspn



Method



Mix curd and oil in a bowl and beat it well.

Add Pizza gravy to it. Beat it again.

Add flour, baking powder, baking soda and seasoning and mix them well.

Add Capsicum and cheese cube to this mixture and mix it finally.

Batter should be in a dropping consistency. 

Take the cup cake mold and fill them half with this batter.

Garnish it with mix herbs and half Olive on the top.

Put it in preheated microwave (convection mode) for 180 degree for 20 minutes.

Take them out and let them cool for 2 minutes.

It's ready to serve hot (with Tomato Catchup) !!!

Servings: 6 Nos.


Ingredients


Warm Milk: 1 ½  Cup
Dry yeast: 2 ¼  tspn.
All purpose flour: 3 ½  Cup
Olive oil: 2 TbSpn
Salt: 2 tspn
Baking powder: 1 ½ TbSpn
Sugar: 1 tspn


Method


In a small bowl, take Luke-warm milk and add dry yeast and sugar to it. Leave that for 10 minutes to activate the dry yeast.

In another mixing bowl, take all purpose flour and add olive oil, salt, baking powder to it.

Mix it well. 

Add activated yeast milk to that and knit smooth dough. Grease a bowl with oil and put that knitted dough into it and cover the bowl with a clean film or a tight lid. Let it rest for 2 hours.

After 2 hours, dough must be risen almost double in the volume.

Again apply some oil onto your fingertips and knead the dough lightly again.

Make six equal parts from the dough.

Arrange them into a baking tray. Let them rest for another 30 minutes.

Preheat the Microwave on 200 degrees for 12 minutes on Convection mode.

Brush all the buns(dough) with olive oil and put the baking tray into microwave and cook it for 12-15 minutes on 180 Degree.

Your fluffy buns are ready to serve !!! ENJOY !!!

Spicy Cheesy Lollipop

Ingredients


Mashed potatoes: 6 no

Blanchland Green Peas: 1/2 Cup

Blanched Corn: 1/2 Cup
Blanched and finely chopped Carrot: 1/4 Cup
Finely chopped onion: 2 Tbspn
Cheese Cubes: 3 no
Corn Flour: 2 to 3 tspn
Salt to taste
Green Chilly Paste: 1 tspn
Garlic Paste: 1 tspn
Chilli Flakes: 1 tspn
Paper powder: Pinch
Corn Flakes: 1 Cup
Maida: 2Tbspn
Water: 1 Cup
Oil: To Deep Fry
Coriander leave: 3 Tbspn



Method


In a mixing bowl add potatoes, green peas, carrot, corn, garlic and chili paste, salt, paper powder, chili flakes, coriander leaves and mix well.

Add some corn flour if required to make thick consistency so that we can make rolls or balls.

Now make equal balls and put cheese cubes in the center of the ball and roll properly and make tight rolls.

In another bowl, take maida and water. Mix well.

Deep rolls into maida slurry and than roll into corn flakes. 



Put oil in a pan and deep fry the rolls on a slow flame.

Serve hot with katch-up or chutney.

Almond and Fig Vedhami



Preparation Time: 30 minutes


Ingredients


Almond Powder: 50 gm
Fig: 100 gm
Ghee: 3 Tbspn
Sugar: 4 Tbspn
Milk Powder: 4 Tbspn

For Dough

Wheat Flour: 1 Cup
Milk: 1/2 Cup
Ghee: 1 Tbspn


Method


Soak Fig (Anjeer) in a warm water for half an hour.

Meanwhile in a bowl take wheat flour and ghee. Knead it well. Add milk into it and make a dough like a paratha. Keep aside.

Drain water and make a smooth paste of Figs.

Heat Ghee in a pan. 

Add Almond and roast it for 1 minute.

Add paste of Fig and sauté It for 3 minutes.

Add milk powder and sugar. Stir well. Let it cool down to the room temperature.

Make equal bolls of stuffing of Almond and Fig.

Roll Medium thick Roti put stuffing in the middle now again make ball of that roti and roll it.

Heat a skillet and put rolled Vedhami on it. Sauté on both the side and apply Ghee on it.

Serve hot!!

Coffee Coconut Swiss Rolls



Preparations Time: 15 minutes

Ingredients

Digestive Biscuits: 1 pack
Coffee Powder: 2 tspn

Shredded Coconut: 200 gm

Condensed Milk: 100 ml

Method


Crush digestive biscuits and make it in a powder form like a flour.

In a bowl add condensed milk and coffee powder into it and make a tight dough and keep aside.

In another mixing bowl, take coconut and condensed milk and make a tight dough.

Roll these doughs separately like a Roti betweem two plastic sheets. 

Put two Rotis on one another and make a tight roll with the help of plastic.

Refrigerate it for half an hour with plastic sheet wrapped onto it.

Cut them into equal size and serve...

Enjoy !!!

NOTE:  Coffee Powder can be replaced with Cocoa Powder or liquid chocolate.

Nankhatai

Nankhatai



Preparation time: 5 Minutes.
Cooking time: 30 Minutes.

Ingredients

All purpose flour ( Maida ): 1 Cup
Gram Flour: 3/4 Cup
Semolina: 1/4 Cup
Ghee: 1 Cup
Powdered Sugar: 1 Cup
Baking Powder: 1 tspn

Method

In a mixing bowl take ghee and powdered sugar and beat well till it gets smooth and light in color.

In another bowl mix all dry ingredients (maida, gram flour, semolina and baking powder).

Add this dry mixture into sugar and Ghee mixture. Mix well and kneed like a dough. 

Now make small equal balls.

Grease the baking plate with Ghee. Put all the  balls  and give rest  for 10 minutes. During this time preheat the microwave on convection mode on 200 degree. 

Put this into preheated microwave on 180 degree for 15 minutes.

Let it rest for 2 minutes.

Ready to serve!!!
