Spicy Cup Cake

Spicy Cup Cake




Preparation Time: 30 minutes
Pre preparation time: 15 minutes

Ingredients

Rice: 1 Cup
Lentils: 1/2 Cup
Grated Bottle gourd (lauki) : 1 Cup
Garlic and green chilly paste: 1 Tbspn
Turmeric powder: 1 tspn
Fenugreek: 1 tspn
Asafoetida: 1/2 tspn
Curd: 1/2 Cup.
Mustered seeds: 1/2 tspn
Sesame seeds: 1 Tbspn
Red chilly powder: 1/2 Tbspn
Curry leaves: 7 to 8
Whole red chillies: 2 no
Cooking Soda: 1/2 tspn
Salt to taste
Sugar: 1 tspn
Lemon juice ( if required): 1/2 or 1 tspn
Oil: 2 to 3 Tbspn
Peanuts: 1 Tbspn

Method



First wash rice and lentils properly and soak them in separate bowl for 7 to 8 hours. 



Crush them separately and mix well them on a bowl.



Add fenugreek, turmeric powder and curd to it and mix properly. Now put air tight lid on that bowl and keep in warm place or in sunlight for again 6 to 7 hours.



Add the grated bottle guard, garlic chilly paste, salt, sugar into that rice and lentils better. If you feel it less sourness than add lemon juice.



Add cooking soda. And bit well.



In a pan heat oil. Add mustard seeds, whole red chillies, curry leaves, asafoetida, red chilly powder and peanuts. Cook it for 30 seconds. 



Pour this Tadka into better. Mix well.



Fill the cup cake mold with this better and tap them. Sprinkle sesame seeds on each.



Put it into preheated microwave/oven for 15 minutes to 20 minutes. 


To check that cup cake is ready or not insert toothpick and if toothpick comes 

out clearly than its done. If not than again put it for 5 minutes. 


Un mold them.

Serve hot!!!

Note: You can add mix vegetables or fenugreek leafs or palak instead of bottle gourd.

Icey Strawberry Smoothie

Icey Strawberry Smoothie





Preparation Time : 10 Minutes
Servings: 2


Ingredients


Strawberries: 10 - 15 Nos.
Skimmed Milk: ½ Cup
Fresh Cream: 3 Tbspn
Plain Hung yogurt: ½ Cup
White Sugar: 3 Tbspn
Vanilla Extract: 2 tspn
Crushed Ice Cubes: 8-10 


Method



Take 8-10 strawberries and cut it in dices.

In a Mixture - bowl, take these diced strawberries

Add Hung curd, cream and sugar to it.

Blend it well. Keep on adding skimmed milk while blending.

Transfer this thick mixture in a pouring bowl.

Take one martini glass. Add crushed Ice in the bottom.

Put some small diced strawberry pieces on it.

Pour that thick smoothie in the glass.

Garnish it with a fresh strawberry to keep it simple.

Chilled Icy Strawberry smoothie is ready to serve.

Dry "Dhokli" with Tadka Paani

Dry "Dhokli" with Tadka Paani


Preparation Time: 20 Minutes
Servings: 4


Ingredients


Rice: 2 Cups
Toor Daal(Red Gram lentils): 1 Cup
Chana Daal (Gram lentils): 1 Cup
Whole Wheat Flour: 2 Tbspn
Sesame seeds (Til): 2 Tbspn
Curd: 1 Cup (or as required to knead the dough)
hing(Asafoetida): 2 tspn
Soda powder: 1 tspn
Turmeric powder: 2 tspn
Salt to taste
Red Chilly powder for garnishing.
Mustard seeds: 1 Tbspn. 
Oil: 4 Tbspn


Method


Grind rice, and lentils (chana and toor) in a grinder and take that mixture into a mixing bowl.

In an another small bowl, take whole wheat flour and add oil to it. Now rub that mixture with help of your palm. Add this mixture to the first bowl of grinned mixture. Mix it well. 

Add salt, pinch of turmeric powder and pinch of soda powder. And with help of curd, knead it like a dough.

Take a bowl full water and let it boil well. 

By the time, prepare small portions from the dough and make it flat (like a traditional dhokali).

Add these all dhokalis into boiling water and let them cook for almost 5-10 minutes on a high flame with the closed lead on the vessel.

Take all cooked dhokalis into a bowl. And let them cool down for a while.

In a tempering pan, take 2 Tbspn of oil. Add mustard seeds and let them crackle well.

Add pinch of hing(Asafoetida) and sesame seeds, red chilly powder to it and temper it in the left boiled water. Let it boil again till 2 -3 shimmers (almost 5 minutes)

In an another pan, take remaining 2 Tbspn oil, add mustard seeds, sesame seeds and a pinch of hing(Asafoetida). 

Add all cooked dhokalis to the pan, and mix them well. 
Add pinch of salt (as they are cooked in a boiling water, some salt from them might have drained).

In a serving dish, Arrange dhokalis accompanied by tempered water in the shot glasses ( This is our way of serving. It can be served in your own way too... :) )


A very unique savory dish is ready to ENJOY. .. !!!

Preparation Time: 20 Minutes
Pre-preparation Time: 5 Minute


Ingredients


All Purpose flour: 1 Cup
Condensed Milk: 3/4 Cup
Caster Sugar: 1/2 Cup
Unflavoured oil: 1/2 Cup
Baking powder: 1 tspn.
Baking Soda: 1/2 tspn.
Vanilla essence: 1 tspn.
Milk: 2 to 3 tspn.
Cherries: 2 no (for Garnish)


Method



Take condensed milk and oil and beat it well.

Add caster sugar in a bowl and beat it well with beater until it gets light in color.

Add Vanilla essence and mix it well.

In another bowl, mix all the dry ingredients ( flour, baking powder, and soda ) and mix well.

Transfer this dry mixture to the prior mixture of condensed milk.

Mix altogether with "Cut&Fold" method.

Preheat the oven on 180 degree for 12-15 minutes.

Transfer the cake batter to the cake mold. And tap it well to make the upper surface smooth.

Put this cake mold into the preheated oven for 20 minutes @ 180 degree.

After 20 minutes, take that out and let it come to the room temperature.

Remove the cake from the cake mold.

Sprinkle caster sugar on the prepared cake and garnish it with two cherries.

Cake is READY !!!

Ingredients


Orange: 2 nos.

Mint Leaves: 4-5 
Orange Zest: 1 tspn
Black Salt: 1/2 tspn
Lemon Juice: 1/2 tspn
Sugar: 1/2 tspn
Aerated Water as required.
Crushed Ice: 2 Tbspn




Method



Peel the oranges and remove all seeds from them.

Take all the orange slices in a juicer and make juice from them.

Take orange juice into a mixing bowl.

Add 2-3 mint leaves, sugar, black salt, lemon juice and orange juice into orange juice.

Add Some lemon zest.

In a serving glass, put some crushed ice.

Fill this orange slush mixture into the serving glass (fill it half).

Add Aerated Water (soda) in the glass.

Garnish it with Mint leaves.

Serve it CHILLED !!!

Ingredients


Strawberries: 10 nos.
Milk: 1 Cup.
Fresh Cream: 2 Tbspn
Crushed Ice 1 Cup.
Sugar: 3 Tbspn.


Method



Cut 6-7 strawberries into dices.

In a Mixture Bowl, put strawberry dices, crushed ice, Milk and fresh cream and sugar(you can replace sugar with Honey).

Blend...blend... blend...  

Take this mixture in a shaker and shake it well till 1 minutes.

And Batido (Kinda shake) is ready to serve.

Serve it Chilled in shot glasses and garnish with fresh strawberry pieces.

Ingredients


Multi grain Oats: 1.5 Cup
All purpose Flour: 1/2 cup
Powdered Sugar: 3/4 Cup
Baking Powder: 2 tspn
Unsalted butter: 1/2 Cup
Raisins: 1/4 Cup
Vanilla extract: 1 tspn


Method


In a mixing bowl, add butter and powdered sugar and mix well until it change the color and gets light.

Add vanilla extract to it and beat well.

In another mixing bowl, mix all dry ingredients.

Add these dry ingredients to the butter and sugar mixture.

Make a dough. 

Make equal size cookie ball from it and put it on a greased  baking tray.

Put the tray in a preheated microwave for 15 minutes in 180 centigrade on convection mode.

After 15 minutes, remove the tray from microwave and keep aside for 10 minutes.

Its ready to serve.

Ingredients


Grated American sweet Corn: 2 nos.
Grated Coconut: 2 Tbspn.
Oil: 2 Tbspn.
Mustered seeds: 1 tspn.
Clove: 4-5 nos.
Cinnamon stick: 1 Inch.
Curry Leaves: 5-6 Nos.
Chilly Garlic Paste: 1 Tbspn.
Turmeric Powder: Pinch
Salt to taste
Lemon Juice: 1 tspn.
Mint leaves: to garnish.
cashew nuts, raisins to garnish.



Method




Cook the grated corn till 3 Whistles in a pressure cooker. While cooking, add pinch of turmeric powder and salt to it.

In a pan, heat the oil.

Add mustered seeds to it and let them creak for a while. Add Cloves, cinnamon stick to it.

Add curry leaves, chilly garlic paste to it and mix it well. 

Add the cooked corn mixture to this pan and mix it well altogether. If it dries quickly, you can add some water(spoon by spoon). Cook it in the pan for 2 -3 minutes. At the end, add lemon juice to it.

Take this Chivda in a serving plate, and garnish it with cashew nuts, raisins and some mint leaves. Serve it HOT. !!!

Ingredients


Fresh (white/brown/sub) breads: 4 nos.
Cheese Spread / liquid Cheese : 2 Tbspn
Corn: 1 Tbspn
Finely chopped Capsicum: 1 Tbspn
Finely chopped Onion: 1 Tbspn
Finely chopped Green Chilly: 1 nos.

Garlic Powder: 1 tspn
Salt to taste
Oragano: 1 tspn
Chilly Flakes: 1 tspn
Mozzarella Cheese to garnish.


Method


In a bowl, take cheese spread and add garlic powder, salt and seasonings to it. 

Mix well. 

Cut the breads with round cookie cutter.

Apply seasoned cheese garlic mixture on each bread.

Top it with capsicum, corn, onion, green chillies and mozzarella cheese.

Put it in a preheated oven on 180 degree for 8 minutes.

And a very yummy cheese garlic breads are ready to melt in your mouth !!!

Ingredients



Preparation Time: 10 Minutes
Servings: 4

Gram Flour: 1 Cup
Butter Milk: 3 Cup
Turmeric: 1/2 tspn
Salt to taste


For Tadka:


Oil: 2 Tbsn
Mustered seeds: 1 tspn
Sesame seeds: 1 tspn
Green chillies: 2 no
Curry leaves: 7 to 8
Chopped coriander leaves for garnishing


Method


Mix gram flour, buttermilk, turmeric powder and salt. Blend well.

Put this mixture into microwave safe bowl on 2 minute micro high mode.

Stir this mixture and again put in a microwave high mode for 2 minute. 

Again beat well and put in microwave high mode for 4 minute. Stir it every 1 minute.

Now spread this mixture on plastic sheet evenly in a thin layer. 

Let it cool down for 2 minutes

With a knife, make vertical cut lines on the sheet.

Roll vertical cuts tightly. 

In one pan, heat oil and add mustered seeds, sesame seeds, chopped green chillies and curry leaves. 

Now pour this tadka on rolls. Garnish them with coriander leaves.

Serve It...!!!

Ingredients


All Purpose flour: 1 Cup
Condensed Milk: 3/4 Cup
Caster Sugar: 1/2 Cup
Unflavored oil: 1/2 Cup
Baking powder: 1 tspn.
Baking Soda: 1/2 tspn.
Vanilla essence: 1 tspn.
Milk: 2 to 3 tspn
Instant coffee Powder: 1 tspn
Mix Fruit Jam for Garnishing


Method


In Luke-warm milk, add coffee powder and mix it well.


Take condensed milk and oil and beat it well.

Add caster sugar in it and beat it with beater until it gets light in color. No lumps should be there.

Add Vanilla essence and coffee mixture. Mix it well.

In another bowl, mix all the dry ingredients ( flour, baking powder, and soda ) and mix well.

Transfer this dry mixture to the prior mixture of condensed milk.

Mix altogether with "Cut&Fold" method.

Preheat the oven on 180 degree for 12-15 minutes.

Transfer the cake batter to silicon cup cake mold. And tap it well to make the upper surface smooth.

Put this cake mold into the preheated oven for 20 minutes @ 180 degree.

After 20 minutes, take that out and let it come to the room temperature.

Remove the cup cakes from the cake molds.

Sprinkle caster sugar on the prepared cup cakes and garnish them with a drop of a Mix fruit jam.

Cup Cake is READY !!!

Ingredients


Puff rice (Vagharela Mamara/Puri): 100 gm
Sev: 50 gm
Finely chopped onion: 1 medium
Finely chopped tomato: 1 medium
Boiled potato: 1 medium
Finely chopped green chillies: 1 to 2
Dates and tamarind chutney: 6 Tbspn
Coriander chutney: 3 Tbspn
Garlic red chilly chutney: 3 Tbspn
Chat Masala: 1 tspn
Salt: pinch
Dry chat puri: 6 no.


Method


Take a big bowl.

In puffed rice, mix sev, crushed dry chat puri, onion, tomato, boiled potato (smashed/chopped) and mix well.



Add all chutneys into it and mix well.

Sprinkle some chat masala, salt to it and again mix well.
Take this mixture in a serving bowl.

Garnish it with coriander leaves and sev.



And the healthy snack is ready to serve.

Ingredients

Blanched Potatoes - 2

For stuffing:

Corn - 1 tbsp
Copped onion- 1 tbspn
Chopped capsicum - 1 tbspn
Chopped Tomatoes -1 tbspn
Chopped Olives green - 1 tbspn
Chopped green onion -  1 tbspn 
Chopped Green chilies - 1
Salt to taste
Black salt to taste
Olive Oil - 1/2 tspn
Crushed Black Papper
Chilli Flacks -1/2 tspn
Oragano - 1/2 tspn
Mix herbs - 1/2 tspn
mozzarella cheese for topping
ketchup and mustard cream

For Marinade :

Hung Curd - 4 tbspn
Kasuri methi (Dried Fenugreek Leaves) -1 tspn
Chat Masala - 1/2 tspn
Salt to taste
Garlic Powder - 1/4 tspn
Black Salt - 1/4 tspn
Olive Oil - 1 tspn
Mint Leaves - 4 to5 


Method


In a bowl, Add kasuri-methi, chat masala, salt, garlic powder, black salt, mint leaves and olive oil in hung curd. Mix well and let it rest for 5 minutes.

Take the blanched potatoes and divide them in to two parts. Scoop all four potato half. Add this potatoes in marinade and leave it for 10 minutes in a refrigerator.

Prepare stuffing by adding corn, capsicum, onion, olives altogether and season it with spices.

Take scooped and marinated potatoes out from refrigerator and fill them with the stuffing. Top it with mozzarella cheese.

Preheat the microwave at 600 watts on grill + microwave mode for 5 minutes. 
Arrange potatoes on a baking tray and put it in a microwave on the same mode for 5 mins.

Take them out and garnish them with drops of tomato ketchup and mustered cream.
